Alloxan

Manufacturers put alloxan in white flour to make it look nice and clean. It destroys the insulin producing beta cells of the pancreas and puts the body at risk for developing diabetes. Scientists actually use alloxan to induce diabetes in lab animals. One more reason to avoid white flour and everything made with it.

Heterocyclic Amines

Heterocyclic amines (HCAs) are the carcinogenic compounds produced when you cook meat well-done, grilled or fried. At high temperatures, glucose, creatine, and various amino acids react to form this chemical. Typically, the longer meat cooks at high temperature, the more HCAs form. Scientific studies have linked certain types of cancer to consumption of meats prepared in this manner. It bothered me to learn this as both my wife and I have always liked our meat well-done.

Cholesterol

While a diet high in saturated fat is usually the main cause of high blood cholesterol levels, it only makes sense that eating foods high in cholesterol also leads to high blood levels of LDL cholesterol, which can build up in the arteries and lead to heart disease. Since high-cholesterol foods are usually also high in saturated fat, their negative impact is twice as bad. Foods high in cholesterol include eggs, beefsteak, butter, cheddar cheese, cream cheese, ice cream, lamb, organ meats such as beef kidneys and liver, and sponge cake.
